First you need a wok.
Heat up 3 table spoons of sunflower oil till it smokes. Then drop in one tablespoon of, de-seeded red chili pepper (Unless you want a hot soup, then leave the seeds in), three cloves of chopped garlic and a thumb size of chopped Ginger. (Chop up all the same size) Mix to get the oil seasoned. Then a package of raw chopped chicken. let it cook some. then add a cup of Chicken stock, two table spoons of fish sauce, A can of Coconut milk.( Shake before opening) hand full of chopped coriander. One table spoon of dark soy sauce. Two table spoons of butter, A dash of sugar, One whole zest of Lime and the lime juice. Then add a stick of Limon grass, smash the end of it ( thin side) to let the flavors out and stir the soup with it. Then just let it sit in there and simmer. Take out before serving.
Put more Fresh Coriander on top when serving. YUMMY!!
Serves two.
For more Just double the chicken, coconut milk and butter.
